Zen Sushi Recipe
Poor-man's Emperor Sushi


Home-made Sushi
$1 per plate

Ingredients:

  • 2 cups water
  • 1 cup short-grain rice
  • 3 T Vinegar
  • 1t Salt
  • 1/2cup thinly sliced vegetables (julienne)
  • 1 Yakinori seaweed leaf
  • 20ml Sweet Thai Sauce or Japanese Soy Sauce

Preparation:

  • Mix 2 cups water, rice, 2T vinegar and salt and cook for 15 minutes
  • Drain rice and leave till dry
  • Add 1T vinegar to drained rice
  • Place Yakinori leaf onto Sushi mat or clean kitchen towel.
  • Spread a thin layer of sticky rice onto the Yakinori leaf, except for the top 1/3rd.
  • Lay 3-5 strips of vegetable horizontally across the rice, about 1/3rd of the way up.
  • Moisten edges of Yakinori leaf
  • Roll in Sushi mat, firm with fingers
  • Slice into pieces with razor-sharp knife dipped in hot water.
  • Drizzle with sauce
